For the Marinade:

  • 1 cup plain yogurt
  • 2 tablespoons lemon juice
  • 2 tablespoons vegetable oil
  • 4 cloves garlic, minced
  • 1 tablespoon fresh ginger, minced
  • 1 tablespoon ground coriander
  • 1 tablespoon ground cumin
  • 1 tablespoon ground turmeric
  • 1 tablespoon garam masala
  • 1 tablespoon paprika
  • 1 teaspoon chili powder
  • 1 teaspoon ground black pepper
  • 1 teaspoon salt
  • 1 teaspoon red food coloring (optional, for traditional color)

For the Chicken:

  • 4 boneless, skinless chicken breasts (or 8-10 chicken drumsticks/thighs)


  1. Prepare the Marinade:

    • In a large mixing bowl, combine the yogurt, lemon juice, vegetable oil, garlic, ginger, coriander, cumin, turmeric, garam masala, paprika, chili powder, black pepper, salt, and food coloring (if using).
    • Mix well until all ingredients are fully combined.
  2. Marinate the Chicken:

    • Score the chicken pieces with shallow cuts to help the marinade penetrate.
    • Add the chicken pieces to the marinade, ensuring each piece is well coated.
    • Cover the bowl with plastic wrap and refrigerate for at least 4 hours, preferably overnight for best results.
  3. Preheat the Oven:

    • Preheat your oven to 400°F (200°C). If using a grill, preheat it to medium-high heat.
  4. Cook the Chicken:

    • Place the marinated chicken on a baking sheet lined with aluminum foil or a grill rack.
    • Bake in the preheated oven for 25-30 minutes, turning halfway through, until the chicken is fully cooked and has a nice charred appearance. If using a grill, cook the chicken for about 10-15 minutes on each side, until fully cooked.
  5. Serve:

    • Remove the chicken from the oven or grill and let it rest for a few minutes.
    • Serve hot with sliced onions, lemon wedges, and fresh cilantro.


  • For a smoky flavor, you can cook the chicken over a charcoal grill.
  • You can also add a few drops of liquid smoke to the marinade if grilling isn't an option.
  • Serve with naan bread or rice and a side of mint chutney or raita for a complete meal.
